Fermentation is the incomplete oxidation (anaerobic breakdown) of a carbohydrate such as glucose in the absence of oxygen, carried out by micro-organisms like yeast and bacteria. In alcoholic fermentation, yeast converts glucose (via pyruvic acid) into ethyl alcohol and carbon dioxide, using the enzymes present in it.
