Emasculation = removing the anthers from an unopened bisexual flower to prevent self-pollination during controlled cross-breeding.

In a plant-breeding programme, a breeder often wants to cross two selected parents. If the female parent bears bisexual flowers, self-pollination would spoil the cross. To prevent this, the process of emasculation is carried out.

Emasculation is the removal of the anthers (stamens) from the flower bud of a bisexual flower, using a pair of forceps, BEFORE the anther dehisces (i.e. before the pollen is shed) and before the flower opens.
