Steam distillation is used to separate and purify organic compounds that:
- are volatile with steam (have an appreciable vapour pressure at the boiling point of water),
- are immiscible (or nearly so) with water, and
- would decompose if heated to their own (typically much higher) normal boiling point.
Principle: When two immiscible, non-reacting liquids (water and the organic compound) are heated together, the mixture boils when the sum of their individual vapour pressures equals the atmospheric pressure — not when either liquid alone reaches its own boiling point. Since this combined vapour pressure reaches atmospheric pressure sooner than either liquid's vapour pressure would alone, the mixture distils over at a temperature below 100°C (below the boiling point of pure water) and well below the organic compound's own (often much higher) normal boiling point.
