Sucrose (cane sugar) is dextrorotatory (rotates plane-polarized light to the right, [α]D=+66.5°[\alpha]_D = +66.5°). On hydrolysis (catalyzed by dilute acid or the enzyme invertase), it breaks down into an equimolar mixture of glucose ([α]D=+52.5°[\alpha]_D = +52.5°, dextrorotatory) and fructose ([α]D=−92°[\alpha]_D = -92°, strongly levorotatory). Since fructose's levorotation is larger than glucose's dextrorotation, the resulting mixture is net levorotatory.
