Intensive properties don't change with the amount of substance; extensive properties do, and are additive.

Intensive properties: Properties that do NOT depend on the quantity or amount of matter present in the system. If a system is divided into smaller parts, each part shows the same value of an intensive property as the whole. Examples: temperature, pressure, density, refractive index, viscosity, surface tension, molar volume, concentration.

Extensive properties: Properties that DO depend on the quantity of matter present in the system. If a system is divided into parts, the value for the whole system is the sum of the values for each part -- i.e. extensive properties are additive. Examples: mass, volume, internal energy (U), enthalpy (H), entropy (S), heat capacity, Gibbs energy (G).
