An open system exchanges matter and energy with the surroundings; an isolated system exchanges neither.

An open system is one that can exchange both matter and energy with its surroundings across its boundary. Example: a beaker of hot water left uncovered — heat escapes to the surroundings and water vapour (matter) also escapes.

An isolated system is one that can exchange neither matter nor energy with its surroundings — its boundary is both impermeable (no matter can cross) and perfectly insulating (no heat/work can cross). Example: a sample sealed inside an ideal thermos flask (rigid, perfectly insulated container) — no heat leaves or enters and no matter enters or escapes.
