Vitamins are essential organic micronutrients, classified by solubility into fat-soluble (A, D, E, K) and water-soluble (B-complex, C); Vitamin C maintains healthy connective tissue and immunity, with citrus fruits as prime sources.

Definition: vitamins are organic compounds required by the body in small (trace) quantities to perform specific biological functions, for normal growth and maintenance of health. Most vitamins cannot be synthesised by the human body (or only in insufficient amounts) and must be obtained through diet; their deficiency causes specific deficiency diseases.

Classification (by solubility):

  1. Fat-soluble vitamins: A, D, E, K. These dissolve in fats/oils and can be stored in the body (mainly liver and adipose tissue), so daily intake is not strictly essential.
  2. Water-soluble vitamins: B-complex (B1, B2, B6, B12, etc.) and C. These dissolve in water, are not stored appreciably (excess excreted in urine), so must be supplied regularly through diet.

Role of Vitamin C (ascorbic acid):

  • Essential for synthesis and maintenance of collagen, the protein forming connective tissue, so it keeps skin, gums, blood vessel walls, and bones healthy.
