By the law of floatation, a floating body displaces a volume of liquid whose weight equals the total weight of the body. Initially, the boat+man system displaces a volume V1 = (weight of boat + man)/(rho_water x g).
When the man drinks a small mass Δm of water from the pond, that water's weight is added to the boat+man system, while an equal mass Δm is simultaneously removed from the pond. The boat, now heavier by Δm, sinks slightly further and displaces additional volume ΔV = Δm / rho_water to support this extra weight (Archimedes' principle).
