Elasticity = recovery of original shape after the load is removed; plasticity = permanent (irreversible) deformation that remains after the load is removed.

Elasticity: When a deforming force is applied to a solid body, it changes shape/size. If, on removing the force, the body returns completely to its original shape and size, the body is said to be perfectly elastic and this property is called elasticity. It occurs because interatomic/intermolecular restoring forces bring the displaced atoms back to their equilibrium positions as long as the deformation stays within the elastic limit. Example: a steel spring stretched a little and released.
