An artificial sweetener is a chemical compound that tastes intensely sweet — often hundreds or thousands of times sweeter than table sugar (sucrose) — but provides negligible or zero calories. Your taste buds perceive the sweetness, but your body cannot break down the molecule for energy, so it passes through without adding to your calorie intake.
The key distinction: natural sugars (glucose, fructose, sucrose) are carbohydrates that your body metabolises for energy. Artificial sweeteners are synthetic compounds that trigger the sweet taste receptor but are not metabolised for energy.
How Do They Work?
Your tongue has taste receptors for sweetness. Normally, when a sugar molecule binds to that receptor, it sends a signal to your brain: "Sweet!" Artificial sweeteners are shaped so precisely that they fit into the same receptor — often much more tightly than sugar does. That's why you need only a tiny amount to get the same sweetness.
Because the molecule is not a carbohydrate, your digestive enzymes cannot break it down. It either gets absorbed and excreted unchanged, or it passes through the gut without being absorbed at all. No breakdown means no calories.

For a compound to taste sweet, it must fit into the sweet taste receptor (a protein called T1R2/T1R3). The "sweetness" is not a property of the molecule itself — it is a property of how the molecule interacts with the receptor.
