Latent heat is the heat absorbed or released per unit mass during a change of state at constant temperature; its SI unit is J/kg.

When a substance changes state (melting, freezing, boiling, condensing, etc.), heat is exchanged with the surroundings, but the temperature of the substance itself stays constant throughout the change of state (until the phase change is complete). This heat is called latent heat, because it does not show up as a temperature change (unlike specific heat, which does).

If a mass m of a substance requires heat Q to completely change its state, the latent heat is defined as:

L = Q / m, i.e. Q = mL
