The conversion of milk to curd is a microbial fermentation process in which lactic-acid-producing bacteria acidify the milk enough to denature and coagulate its main protein, casein, giving curd its characteristic semi-solid texture.

Process of conversion of milk into curd

Milk is inoculated with a "starter culture" containing lactic acid bacteria (LAB), such as species of Lactobacillus (and Streptococcus), which are naturally present in small amounts in raw milk and multiply rapidly under suitable conditions. These bacteria ferment the milk sugar, lactose, converting it into lactic acid. The resulting steady increase in the acidity of the milk causes the milk's principal protein, casein, to denature and coagulate (curdle), converting the liquid milk into a semi-solid mass — curd.
