Osmosis is the movement of water across a selectively permeable membrane down its water-potential gradient; the thistle-funnel experiment visibly demonstrates this as a rise in solution level.

Osmosis: Water molecules move spontaneously from a region of higher water potential (i.e. a dilute solution, or pure water) to a region of lower water potential (a more concentrated solution) through a membrane that is permeable to water but not (or less) permeable to the solute. Net movement continues until water potentials equalise on both sides, or until it is balanced by an opposing pressure.

Thistle-funnel demonstration (as would be shown in a diagram):

  1. The wide mouth of a thistle funnel is covered tightly with a selectively permeable membrane (e.g. a parchment/cellophane membrane or a pig's bladder).
  2. The funnel is filled with a concentrated sugar (sucrose) solution.
  3. The covered mouth of the funnel is then immersed, inverted, into a beaker of pure water, with the narrow stem projecting upward (often with the solution level marked, or a manometer/scale attached to the stem). …
