Phenol's -OH oxygen has a lone pair that can attack the carbonyl carbon of an acylating agent (acid anhydride or acid chloride), displacing the leaving group and forming an ester (this is O-acylation).
Example reaction:
C6H5OH + (CH3CO)2O --(pyridine/base, or trace acid)--> C6H5-O-COCH3 (phenyl acetate) + CH3COOH
