Curd (starter) inoculates fresh milk with lactic acid bacteria that ferment it into more curd.

A small quantity of curd added to fresh milk acts as an 'inoculum' or starter culture containing millions of live Lactic Acid Bacteria (LAB), chiefly Lactobacillus. These bacteria multiply rapidly in the milk, converting milk sugar (lactose) into lactic acid.
