Sugars that reduce Fehling's/Tollens' reagent due to a free -CHO or keto group are reducing sugars; e.g. glucose, fructose, maltose, lactose.

Carbohydrates are classified on the basis of their reducing behaviour towards mild oxidising reagents such as Fehling's solution and Tollens' reagent.

Reducing sugars are those carbohydrates that contain a free aldehyde group (-CHO) or a free ketonic group (or can be converted into one by ring opening) at the anomeric carbon. Because of this free functional group, they can reduce:

  • Fehling's solution (giving a red precipitate of Cu2O), and
  • Tollens' reagent (giving a silver mirror).

Examples:

  • All monosaccharides (glucose, fructose, galactose) are reducing sugars.
