Skeletal muscle under hypoxia produces lactic acid, while yeast fermentation produces CO2 and ethanol.

When oxygen is limited, glycolysis can still continue, but the pyruvic acid it produces cannot proceed through the aerobic route into the citric acid cycle. Instead, it is diverted through fermentation, whose specific end products differ between organisms.

  • In skeletal muscle, under hypoxic conditions such as vigorous exercise, pyruvic acid is reduced to lactic acid, in a reaction catalysed by lactate dehydrogenase.
