Emulsion = a colloid of one liquid dispersed in another immiscible liquid. Two types: oil-in-water (O/W, e.g. milk) and water-in-oil (W/O, e.g. butter/cold cream).

What an emulsion is:

  • An emulsion is a colloidal system (dispersion) in which one liquid is dispersed as fine droplets in another liquid, the two liquids being immiscible (or partially miscible).
  • Both the dispersed phase and the dispersion medium are liquids.
  • Emulsions are usually unstable and need an emulsifying agent (emulsifier), such as soap or a protein, to stabilise them.

Types of emulsion (two types):

  1. Oil-in-water (O/W) type:
  • Oil is the dispersed phase and water is the dispersion medium (oil droplets scattered in water).

  • Examples: milk (fat/oil droplets dispersed in water), vanishing cream.
