In an X-ray tube, electrons are accelerated through a high voltage and made to strike a heavy metal target; their sudden deceleration converts kinetic energy into high-frequency X-ray photons.

In a device such as a Coolidge tube, electrons are emitted from a heated filament (cathode) and accelerated through a very high potential difference (tens of kV) towards a heavy metal target (e.g. tungsten, molybdenum) at the anode.

When these high-speed electrons strike the target, they are abruptly decelerated within the target material. This rapid deceleration causes part of the electrons' kinetic energy to be radiated away as high-frequency electromagnetic radiation - X-rays. (Some X-rays are also produced when the incoming electrons knock out inner-shell electrons of the target atoms, and outer electrons fall in to fill the vacancy, emitting characteristic X-rays.)
