Maize is a monocot, endospermic seed: its seed coat is fused to the fruit wall (pericarp), it has a large starchy endosperm, and its embryo has one cotyledon (scutellum), with the plumule and radicle each protected by a sheath (coleoptile and coleorhiza respectively).

Maize (a cereal grain, technically a one-seeded fruit called a caryopsis) illustrates the structure of a typical monocotyledonous, endospermic seed:

  1. Seed coat and pericarp: In maize, the thin seed coat is fused with the fruit wall (pericarp), so the outer covering represents both structures combined.
  2. Endosperm: A bulky, starchy endosperm occupies most of the seed's volume. It is the main food-storage tissue and persists in the mature seed (hence maize is called an "endospermic" seed) — unlike dicot seeds such as gram/pea where the endosperm is consumed during development.
