The red colouration in tomatoes, carrots and chillies is due to a carotenoid — the same category of pigment that serves as an accessory photosynthetic pigment in green leaves, though in these non-green tissues it is not actually functioning photosynthetically.

Chromatographic separation of leaf pigments shows that leaf colour comes from four distinct pigments: chlorophyll a (bright/blue-green), chlorophyll b (yellow-green), xanthophylls (yellow), and carotenoids (yellow to yellow-orange). In the leaf, carotenoids function as one of the accessory pigments, alongside chlorophyll b and the xanthophylls — they absorb light at wavelengths chlorophyll a itself captures less well, transfer that energy to chlorophyll a, and help protect chlorophyll a from photo-oxidative damage caused by excess light. …
