Gastric juice's HCl activates pepsinogen into pepsin, which cleaves dietary proteins into shorter polypeptide fragments (proteoses and peptones) — the first real step of protein digestion.

The stomach's gastric glands secrete gastric juice, containing the key components for protein digestion:

  1. HCl (from oxyntic/parietal cells): creates a strongly acidic environment (pH ~1.8–3.5) in the stomach. This acidity (a) denatures/unfolds dietary proteins, exposing peptide bonds for enzyme action, (b) activates pepsinogen into active pepsin, and (c) kills most ingested bacteria.
  2. Pepsinogen (from peptic/chief cells): secreted in an inactive form (a zymogen) so the gland cells that make it aren't digested by their own enzyme. HCl converts it to the active enzyme pepsin.
  3.
