An enzyme is a protein catalyst that speeds up a specific reaction without being used up; its activity is influenced mainly by temperature, pH, substrate concentration and enzyme concentration.

An enzyme is defined as a biological catalyst, almost always a globular protein, that increases the rate of a specific biochemical reaction by lowering its activation energy, while the enzyme itself remains chemically unchanged at the end of the reaction and can be used repeatedly. Enzymes are highly specific, each generally acting on one substrate or one type of reaction, due to the precise three-dimensional shape of their active site.

Four important factors affecting enzyme action:

  1. Temperature - enzyme activity increases with temperature up to an optimum (rate of molecular collisions rises), beyond which the enzyme's protein structure denatures and activity falls sharply.
  2. pH - each enzyme has an optimum pH at which its active-site shape is best suited to bind substrate; activity falls away from this optimum as the enzyme's ionic bonds and folding are disturbed. …
