Differentiation is the process in which unspecialised, dividing meristematic cells transform into specialised, mature cells with a fixed structure and function.

A plant's growth results from the continuous division of cells at its meristems (apical, lateral or intercalary). These newly formed cells initially look similar (small, thin-walled, densely cytoplasmic), but as they mature they undergo cell differentiation: they change in cell shape, wall thickness/composition, and cell content in ways suited to a particular permanent function. For example, some cells develop thick, lignified walls and lose their protoplasm to become water-conducting xylem tracheids/vessels; others become photosynthetic parenchyma packed with chloroplasts, or become elongated fibre cells for mechanical support. …
