A person can survive and live a normal life with only one healthy kidney, because one kidney has more than enough nephrons to filter blood and regulate the body's water and waste balance on its own.

Each kidney contains roughly a million nephrons, and under normal conditions the body uses only a fraction of its total filtering capacity at any given time. If one kidney is removed (or donated, as in a living kidney transplant), the remaining kidney can undergo compensatory hypertrophy — its nephrons enlarge and become somewhat more efficient — and take over the excretory workload.
