Anaerobic respiration is termed fermentation because it partially oxidises glucose without oxygen into energy-rich end products (ethanol/lactic acid), just as fermenting yeast or bacteria do.

In the absence of oxygen, cells (and microorganisms like yeast) cannot carry glucose breakdown through the full aerobic pathway (Krebs cycle and electron transport chain). Instead, pyruvate produced by glycolysis is converted into either ethanol and carbon dioxide (as in yeast, alcoholic fermentation) or lactic acid (as in some bacteria and, transiently, in oxygen-starved muscle cells) — this incomplete oxidation is chemically identical to what is classically called fermentation in microbiology.
