Anaerobic respiration is called fermentation because it uses the same oxygen-independent pathway (glycolysis followed by pyruvate conversion to ethanol/CO2 or lactic acid) that is exploited industrially for fermentation processes like brewing.

In the absence of oxygen, cells cannot carry out aerobic respiration (which needs O2 as the final electron acceptor in the electron transport chain). Instead, after glycolysis produces pyruvic acid from glucose, this pyruvic acid is further metabolised anaerobically:

  • In yeast, pyruvic acid is converted to ethanol and carbon dioxide — this is alcoholic fermentation, the exact process used industrially to brew beer/wine and to leaven bread.
  • In some plant/animal cells (e.g. muscle cells during vigorous exercise), pyruvic acid is converted to lactic acid — lactic acid fermentation, the same process used industrially to make curd/yogurt from milk. …
