Fat releases the most energy per gram on oxidation, followed by protein, a glucose-protein mixture, and then pure glucose, which releases the least.

The amount of energy released when a gram of a respiratory substrate is completely oxidised depends on how chemically reduced that substrate is — that is, how much hydrogen (bonded to carbon) it carries relative to its oxygen content. Fats are highly reduced molecules with a much larger proportion of carbon-hydrogen bonds relative to their mass than either carbohydrates or proteins, which is why they yield the greatest amount of energy per gram when fully oxidised to CO2 and water.

Proteins, once their amino acids are deaminated and the carbon skeletons enter the respiratory pathway (at various points, from pyruvate to acetyl CoA to intermediates of the citric acid cycle), release somewhat less energy per gram than fat, but more than pure carbohydrate such as glucose.
