Surface tension minimises the free surface area of a liquid; for a fixed volume, a sphere has the smallest possible surface area, so small drops (where gravity is negligible) take a spherical shape.

Surface tension arises because molecules at the liquid surface experience a net inward pull from neighbouring molecules (unlike molecules in the bulk, which are pulled equally in all directions). This makes the surface behave like a stretched elastic skin that tries to contract to the smallest possible area.
