Surface tension minimises surface area for a fixed volume, and a sphere has the least surface area of any shape for a given volume — so small drops become spherical.

Surface tension is the property of a liquid's free surface that makes it behave like a stretched elastic membrane, tending to contract so as to occupy the minimum possible surface area. This arises because molecules at the surface experience a net inward pull from neighbouring molecules (since they have neighbours only on the liquid side, not above), so the liquid surface tries to minimize the number of molecules exposed at the surface, i.e., minimize surface area.

For any given (fixed) volume of liquid, a sphere is the geometric shape that has the SMALLEST possible surface area. So, since surface tension makes the drop try to minimise its surface area while its volume stays fixed, the drop naturally settles into a spherical shape — this minimises the surface energy (surface tension x surface area) of the drop.
