Enzymes are highly specific protein catalysts produced by living cells that speed up biochemical reactions without themselves being consumed.

Enzyme catalysis is a form of homogeneous catalysis in which the catalyst (enzyme, a protein molecule with an active site) binds its substrate (reactant) with very high specificity, lowering the activation energy and enormously increasing the rate of a specific biochemical reaction, and works efficiently even at the mild temperatures and pH found in living systems.

Example: Invertase catalyses the hydrolysis of sucrose into glucose and fructose:

C12H22O11 (sucrose) + H2O --(invertase)--> C6H12O6 (glucose) + C6H12O6 (fructose)
