Baker's yeast (Saccharomyces cerevisiae) leavens bread by fermenting sugars in the dough to release CO2 gas.

Baker's yeast is the common name for the unicellular fungus Saccharomyces cerevisiae. When added to bread dough, the yeast ferments the sugars present, breaking them down anaerobically to release carbon dioxide gas and a small amount of ethanol. The CO2 produced gets trapped as bubbles within the elastic gluten network of the dough, causing it to rise (leavening) and giving bread its soft, porous texture after baking.
