The real difference is kinetic energy: elastic collisions conserve it exactly, while inelastic collisions do not, because some of it is converted into heat, sound, or permanent deformation.
Comparison of elastic and inelastic collisions:

Momentum: Elastic — conserved. Inelastic — also conserved (this is true for ANY collision with no external force).

Kinetic energy: Elastic — total kinetic energy before collision = total kinetic energy after collision (fully conserved). Inelastic — total kinetic energy AFTER is less than before; some KE is converted into heat, sound, and/or permanent deformation of the colliding bodies.

Deformation: Elastic — bodies regain their original shape after collision (no permanent deformation); e.g., collisions between hard steel/glass balls, or gas molecules, approximate this. Inelastic — bodies undergo some permanent deformation; e.g., a lump of clay hitting the floor.
