Black coating maximizes radiant heat absorption; copper bottoms maximize thermal conduction so heat spreads uniformly and cooking is efficient.

Why utensils are coated black:

According to the theory of heat radiation, a perfectly black surface is the best possible absorber as well as the best possible emitter of thermal radiation (this is the basis of the concept of a black body). A dull black surface absorbs almost all the radiant heat falling on it from the flame, reflecting very little, whereas a shiny/polished surface reflects most of the incident radiation away. So blackening the outside of a cooking vessel lets it absorb heat from the flame far more efficiently, making it heat up faster and cook food more quickly, saving fuel.
