The pink pigment of legume root nodules is leghaemoglobin; it scavenges (removes) oxygen to protect the enzyme nitrogenase, which is destroyed by oxygen.

Root nodules of leguminous plants (like pea, gram, beans) are the sites of biological nitrogen fixation by symbiotic Rhizobium bacteria. The enzyme responsible for fixation is nitrogenase, which converts atmospheric nitrogen (N2) into ammonia.

A striking feature of these nodules is a pink-coloured pigment present in them. This pigment is leghaemoglobin (an iron-containing pigment similar to the haemoglobin of blood).
