Plasmolysis is exosmosis-driven shrinkage of the protoplast away from the cell wall in a hypertonic solution; it is exploited practically to preserve food by killing microbes osmotically.

What is plasmolysis? When a living plant cell is placed in a hypertonic solution (a solution with a solute concentration higher than that of the cell sap, i.e., with lower/more negative water potential than the cell), water moves out of the cell by exosmosis, along the water potential gradient. As water leaves, the cell's protoplasm (protoplast) shrinks and pulls away from the rigid cell wall. This phenomenon is called plasmolysis. Initially the protoplast separates at the corners (incipient plasmolysis); if exposure continues, it may separate fully (evident plasmolysis). Plasmolysis is reversible — if the cell is then placed in a hypotonic/pure water solution, water re-enters by endosmosis and the protoplast regains contact with the wall (deplasmolysis).
