When a living plant cell is placed in a hypertonic (concentrated) solution, water moves out of the cell by exosmosis, causing the protoplast (cell membrane and its contents) to shrink and pull away from the rigid cell wall — this is plasmolysis. Its significance:
- Demonstrates selective/differential permeability — since the rigid cell wall is freely permeable to water and solutes, but the protoplast (plasma membrane) shrinks away from it, plasmolysis experimentally proves that it is the plasma membrane, not the cell wall, that controls what enters and leaves the cell (i.e. it is selectively/differentially permeable), while the cell wall is merely permeable.
- Test of cell viability — only a living cell, with an intact functioning plasma membrane, shows plasmolysis; a dead cell's membrane cannot maintain the osmotic barrier needed for the process, so plasmolysis is used as a simple test to check whether plant tissue is alive.
- Basis of food preservation — adding a high concentration of salt (as in pickling) or sugar (as in jam-making) creates a hypertonic environment around any microbial (bacterial/fungal) cells present, causing plasmolysis in them, which dehydrates and kills/inactivates the microbes, thereby preserving the food. …
