Food preservatives prevent spoilage of food caused by microorganisms; common examples are sodium benzoate and salt/sugar.

Food preservatives are chemicals that are added to food materials to prevent their spoilage caused by microbial growth (bacteria, yeast, moulds), thus increasing their shelf life without significantly changing their taste, colour, or nutritional value.

Examples:

  • Sodium benzoate (and benzoic acid) - one of the most commonly used preservatives, added to squashes, jams, pickles.
  • Salt and sugar - traditional preservatives used in pickles, jams (they lower water activity, inhibiting microbial growth).
  • Sodium metabisulphite - used for preserving fruit juices/squashes.
  • Sorbic acid and its salts (class II preservatives) - used in cheese, bread. …
