Chyme is the acidic, semi-digested food paste produced in the stomach before it enters the duodenum.

When swallowed food (bolus) reaches the stomach, the muscular walls of the stomach churn and mix it thoroughly with gastric juice secreted by the gastric glands. Gastric juice contains hydrochloric acid, pepsinogen and mucus. The HCl activates pepsinogen into pepsin, which begins protein digestion, and also kills ingested microbes and provides the acidic pH needed for pepsin action.
