Mutarotation happens because a cyclic sugar's two anomeric (α and β) forms interconvert in solution via the open-chain form, until a fixed equilibrium ratio of the two anomers is reached — seen as a changing optical rotation with time.

When a pure anomer of a reducing sugar (e.g., pure α-D-glucose or pure β-D-glucose) is dissolved in water, its specific rotation is initially that of the pure anomer, but it gradually drifts (rises or falls) over time until it reaches a stable, intermediate equilibrium value — because the ring opens reversibly to the open-chain aldehyde form and recloses to give a mixture of both α and β anomers in a fixed ratio.
