A polypeptide is a long chain of amino acids linked head-to-tail by peptide bonds (−CO−NH−-CO-NH-); proteins are naturally occurring polypeptides.

Concept: Amino acids join when the −COOH-COOH group of one reacts with the −NH2-NH_2 group of the next, eliminating water and forming a peptide (amide) bond −CO−NH−-CO-NH-. Two amino acids give a dipeptide, three a tripeptide, and many amino acids linked this way form a polypeptide. When the number of residues is large and the molecule has a defined biological function, it is called a protein.
