Fructose is the ketohexose CH2OH−CO−(CHOH)3−CH2OHCH_2OH-CO-(CHOH)_3-CH_2OH; glucose shows a carbonyl (oxime with NH2OHNH_2OH, cyanohydrin with HCN) and a straight 6-carbon chain (n-hexane with HI/red P).

Structural formula of fructose (open chain). Fructose is a 2-ketohexose (ketone at C2, five –OH groups):

1. Oxime formation (presence of a carbonyl –CHO). With hydroxylamine, the aldehyde group forms an oxime:
