This is simple osmosis across the semi-permeable egg membrane: water always flows from the region of lower solute concentration to the region of higher solute concentration.

A shelled (excoriated) egg is covered by a thin semi-permeable membrane that allows water molecules to pass through but restricts the passage of larger solute particles.

When the egg is placed in pure water, the water outside has a lower solute concentration than the fluid inside the egg, i.e. the outside solution is hypotonic relative to the egg's interior. Water therefore moves from the region of higher water potential (outside) into the egg (endosmosis), and the egg swells/inflates. …
