The gold number of a protective (lyophilic) colloid is defined as the minimum mass, in milligrams, of that colloid required to just prevent the coagulation of 10 mL of a standard red gold sol when 1 mL of 10% NaCl solution is added to it. A smaller gold number means a better protective colloid (needs less of it). Starch has a gold number of 20 — i.e. 20 mg of starch is the minimum quantity needed to protect the gold sol from salt-induced coagulation. (Starch is actually a relatively poor protective colloid; gelatin, for comparison, has a much smaller gold number, ~0.005–0.01.)
