Pyruvic acid's three fates are lactic acid, ethanol plus CO2, or acetyl CoA plus CO2, depending on conditions.

Glycolysis, occurring in the cytoplasm, converts glucose step by step — through glyceraldehyde 3-phosphate, 3-phosphoglyceric acid and phosphoenolpyruvic acid — into pyruvic acid, the final product of the pathway. What happens to pyruvic acid next is not fixed; it depends on whether oxygen is available and on the type of organism or cell involved.

  • Lactic acid fermentation: In some bacteria, and in animal cells such as muscle during exercise when oxygen is inadequate, pyruvic acid is reduced to lactic acid, using NADH + H+ as the reducing agent (via lactate dehydrogenase), which reoxidises it back to NAD+.
  • Alcoholic fermentation: In organisms such as yeast, under anaerobic conditions, pyruvic acid is instead converted to CO2 and ethanol, through the successive action of pyruvic acid decarboxylase and alcohol dehydrogenase. …
