RQ = (volume of CO₂ evolved) / (volume of O₂ consumed). Fats have a lower proportion of oxygen relative to carbon and hydrogen than carbohydrates, so their complete oxidation consumes more O₂ relative to the CO₂ released, giving an RQ below 1, typically around 0.7.
