Ionic compounds are generally soluble in water because the polar water molecules hydrate and separate the constituent ions, overcoming the ionic lattice energy.

An ionic compound is a crystalline lattice of alternating cations and anions held together by strong electrostatic (Coulombic) forces.

Water is a polar solvent — its oxygen atom (partial negative) can surround and stabilize cations, while its hydrogen atoms (partial positive) can surround and stabilize anions.
