Two ethanal molecules, in dilute base, combine to give 3-hydroxybutanal (the aldol); heating this eliminates water to give but-2-enal (crotonaldehyde), the α,β-unsaturated aldehyde — this two-step sequence is the aldol condensation.

Definition: Aldehydes and ketones that possess at least one α-hydrogen atom undergo a base-catalysed self-addition reaction: dilute alkali (e.g. NaOH) removes an α-hydrogen to generate a resonance-stabilised carbanion (enolate), which then acts as a nucleophile and attacks the carbonyl carbon of a second molecule of the same aldehyde/ketone. The product is a β-hydroxy aldehyde or β-hydroxy ketone, called an aldol. On heating, this aldol readily undergoes dehydration (loss of a water molecule, since the resulting alkene is conjugated with the carbonyl) to give an α,β-unsaturated carbonyl compound. The overall two-step process (addition + dehydration) is called aldol condensation.
