Carbohydrates are polyhydroxy aldehydes/ketones (or polymers built from them) that serve as an energy source and store, as structural material, and as components of nucleic acids.

Definition:

Carbohydrates are defined as optically active polyhydroxy aldehydes or ketones, or compounds which, on hydrolysis, produce such polyhydroxy aldehydes or ketones. They have the general formula Cx(H2O)yC_x(H_2O)_y for many (though not all) members, which historically gave rise to the name 'carbohydrate' ('hydrate of carbon').

Three important functions of carbohydrates:

  1. Source and store of energy: Carbohydrates (like glucose) are the primary, readily-metabolised source of energy for living cells; excess glucose is stored as starch in plants and as glycogen in animals for later use.
  2. Structural material: Cellulose, a polysaccharide, forms the structural framework of plant cell walls, giving them rigidity; chitin (a related polysaccharide) forms the exoskeleton of insects and crustaceans.
