Golden rice is a transgenic rice variety engineered to accumulate beta-carotene in its grain, addressing vitamin A deficiency in rice-dependent populations.

Ordinary rice endosperm (the edible, polished grain) lacks beta-carotene, the precursor of vitamin A, so populations that rely heavily on polished rice as a dietary staple are at risk of vitamin A deficiency, which can cause night blindness and other health problems, especially in children. Golden rice was developed as a genetically modified (biofortified) rice variety to address this nutritional gap. Scientists introduced genes encoding enzymes of the beta-carotene biosynthetic pathway (originally sourced from daffodil and later improved using genes from maize, together with a bacterial gene) into the rice genome, engineered specifically to be expressed in the endosperm. As a result, the rice grain accumulates beta-carotene, giving the grain a distinctive yellow-golden colour (hence the name "golden rice") and providing a dietary source of pro-vitamin A when consumed and metabolised in the body.
